Is there anyway to change the post time from minutes ago to the actual date/time?

If you need to, click on 'UserCP' in the navigation bar. On the left hand side you will see a link to 'Edit Options' under the 'Settings and Options' heading. Scroll down to the bottom and ensure you are in the correct time zone
